To do this tripe casserole you'll need: 1kg of tripe, a piece of bacon (about 200 grams), 250 grams of beans, 250 grams of chickpeas, 1 onion, 2 sausages, 1/2 kg of potatoes, 2 carrots, 1/4 liter of tomato sauce, parsley, oregano, salt, and oil.
preparation:
First of all, you should wash the tripe and then cook in salted water until tender, this can take a long time. Once the tripe is cooked, let cool and then cut into small cubes or chunks of not more than 1 cm wide and 2 cm long. Also, beans and chickpeas cooking until almost done and leave aside for later. Then you start making the dish.
Put a little oil in a large pan with the bacon cut into small cubes and onion and garlic into pieces. Cook until onion begins to see transparent and then add the tripe and sausage (cut into small pieces), simmer for a few minutes.
Then add the tomato sauce, a little water, salt, oregano, parsley, and carrots cut into small pieces. Simmer for about 5 minutes then add the potatoes cut into small cubes along with the beans and chickpeas. Add more water if necessary (this dish should be moist), and cook until potatoes are done.
