Welcome to Hdrcreme...You really need to shoot this type of subject with a tripod so you can get the ISO down to 100/200 max...Plus with a Nikon you can take 5, 7 or 9 x 1 ev on auto to get smoother tones...The speckle effect you can see in this image is
