I am aware of a issue involving focus in the center of this image so can i ask, is it better to turn off the AF for HDR, {a} on the lense {b} on the camera?

You may want to try this Rule of Thumb: "Focus: Choose a focus mode that works best for the given situation. Most of the time, autofocus (AF) works very well and you don’t have to worry about it. If the setting’s dark, you may need to switch to Manual mode. This way the camera will focus on the exact same spot in every bracket." I don't see much problem with the center focus on this image other than the back of the chairs, center and right... a bit soft. At F/11 it looks about right to me. Like the Composition and Cropping ..........Well Done.

There are some green chromatic aberrations on the chairs and tables I would correct them
